Bonus Recipe: Easy Lemon Poppy Seed Cake

This light and refreshing cake is perfect for a morning tea.

Ingredients:

175g softened butter
1 ½ cups caster sugar
3 large eggs
Grated rind of 1 lemon
3 cups self-raising flour
½ cup milk
¼ cup poppy seeds
Icing sugar, for dusting (optional)

Instructions:

Preheat oven to 180°C (160°C fan-forced). Grease and line a 20cm round cake tin.
Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon rind.
Sift in flour and poppy seeds alternately with the milk, mixing well until just combined.
Pour batter into prepared tin and bake for 50-55 minutes, or until a skewer inserted into the centre comes out clean.
Cool cake in the tin for 10 minutes before transferring to a wire rack to cool completely. Dust with icing sugar before serving (optional).
